White chocolate is made with cocoa butter, cane sugar, and powdered milk. It doesn't contain cocoa nibs, which explains its off-white color. I used an exceptional coffee, the Geisha variety, from Huila, Colombia, to flavor this bar. The chocolate takes on the dark caramel hue of the coffee, but remains a "white" chocolate.
The Huila heeled toad, endemic to Colombia, is a symbol of the extinction crisis facing many amphibian species in Colombia.
