White chocolate is made with cocoa butter, cane sugar, and powdered milk. It doesn't contain cocoa nibs, which explains its off-white color. To flavor this bar, I used coffee from the Yirgacheffe region in southern Ethiopia, the birthplace of coffee. The chocolate takes on the dark hue of the coffee, but remains "white" chocolate.

The Abyssinian lion, although an endangered species, is the national symbol of Ethiopia; it represents Ethiopian culture, royalty, and strength.
