The chocolate bar fabrication process generates residue. What can you do with these? Well here is a delicious suggestion for recovering cocoa powder from the crushing and winnowing of cocoa beans.

1 cup of “cocoa flour”
1 cup cashew puree*
1/2 cup olive oil
3 eggs
3 tbsp DIJON mustard
1 tsp salt
1/2 tsp pepper
Soak 1 cup of cashews in cold water just to cover and rest in the fridge for 12 to 24 hours.
Puree until smooth in a food processor.
Then put all the other waffle batter ingredients in the processor with the cashew puree and mix to form a paste.
Refrigerate waffle batter, and when ready to serve, place 2 large spoonfuls of batter in a hot waffle iron; cook 1.5 minutes to 2 minutes.
Serve with beef or salmon tartare, blue cheese or brie and smoked salmon. Let your imagination run wild!
Replace salt, pepper and mustard with 3 tbsp of sugar and serve with a scoop of ice cream and melted dark chocolate!
